For me, one of the greatest things about making deliciously astounding entrees is blending in elements of recognition with brand new experiences. Like the Papaya Fillet, reminding of a Salmon Fillet but not even close in smell, taste or texture. Or the courgette spaghetti, or courghetti for short, with a raw Bolognese.

I love simpleness, lifting the great taste of each food rather than blending them to much beforehand. Making a composition on each plate that will revolutionize your view of what food is, or can be, I am deeply involved in the creative process of bringing the most from the food to all your senses.
